  GRILLED CHICKEN SALAD WITH RAISINS AND ALMONDS

INGREDIENTS
 
1 cup Fresh Gourmet® Golden Raisins
1 cup Fresh Gourmet® Roasted Garlic Sliced Almonds
2 chicken breast halves, boneless and skinless
1 tsp garlic salt
1/2 large cucumber, seeded and thinly sliced
24 cherry tomatoes
4 cups leaf lettuce, torn into bite-sized pieces
Dressing:
2 tbsp oil
2 tbsp honey
2 tbsp orange juice
1 tbsp rice vinegar
2 tsp dijon mustard
1 tsp poppy seeds



  DIRECTIONS
 
Sprinkle chicken with garlic salt. Grill chicken using grill pan or barbeque until juices run clear. Cool chicken. When cool, slice chicken breasts into bite-sized pieces.

In a large bowl, toss together chicken, cucumber, tomatoes, lettuce, Fresh Gourmet® Golden Raisins and Fresh Gourmet® Roasted Garlic Sliced Almonds.

Divide equally onto indiviudal plates.

Dressing:

Shake all ingredients in a tightly covered container until well blended.
