BOSTON RED LEAF SALAD

INGREDIENTS
 
1 pkg Fresh GourmetŪ Cheese & Garlic Premium Croutons, or your favorite flavor
2 large heads Boston red leaf lettuce
1 cup bleu cheese crumbles (or goat cheese)
1 red onion, sliced thin
1 tomato, sliced into wedges
Salt and freshly ground pepper
Citrus vinaigrette:
1 cup orange juice
3 tbsp champagne vinegar (or balsamic vinegar)
1/2 cup olive oil
1 tbsp dijon mustard



  DIRECTIONS
 
Wash and dry lettuce. Refrigerate.

In a saucepan reduce the orange juice to a syrup and cool.

Blend orange syrup with mustard and vinegar. Whisk in the oil slowly.

Place lettuce on a large platter or bowl and drizzle with dressing.

Garnish with Fresh GourmetŪ Cheese & Garlic Premium Croutons, red onions and tomatoes.
