GOLDEN RAISIN AND CARROT SALAD

INGREDIENTS
 
1/4 cup Fresh GourmetŪ Golden Raisins
2 tbsp white wine vinegar
4 tbsp vegetable oil
4 tbsp water
2 tbsp grated onion
2 tsp Dijon-style mustard
4 cups finely chopped cabbage
2 carrots, grated coarse



  DIRECTIONS
 
In a small saucepan combine the Fresh GourmetŪ Golden Raisins, vinegar, oil, water, onion, mustard, salt and pepper to taste and boil the mixture, stirring for 30 seconds.

In a blender, puree the vinaigrette until is is smooth .

In a separate bowl, toss vinaigrette with cabbage and carrot.
