ORANGE AND ALMOND SPINACH SALAD

INGREDIENTS
 
2/3 cup Fresh GourmetŪ Toasted Sliced Almonds
6 tbsp vegetable oil
1/4 cup fresh orange juice
3 green onions, minced
3 tbsp unseasoned rice vinegar
1 tbsp honey
1 tbsp chopped fresh tarragon
1 tsp grated orange peel
4 oranges
1 1/2 (6 oz) pkgs baby spinach



  DIRECTIONS
 
Whisk first seven ingredients in small bowl. Season with salt and pepper.

Cut peel and white pith from oranges. Working over medium bowl, cut between membranes to release segments. (Dressing and oranges can be made one day ahead. Cover separately and chill. Re-whisk dressing before using.)

Combine spinach, half off Fresh GourmetŪ Toasted Sliced Almonds and all orange segments in large bowl with enough dressing to coat.

Divide among six plates and sprinkle with Fresh GourmetŪ Toasted Sliced Almonds.
