INGREDIENTS
 
1 pkg (3.5 oz) Fresh GourmetŪ Santa Fe Style Tortilla Strips
1 can (16 oz) chick peas
2 tbsp olive oil
4 cups water
1/2 cup onion (chopped)
1 whole pimento (red bell pepper, finely chopped)
1/4 tsp white pepper
2 cups chicken broth
pinch of ground cumin
1/4 cup celery (chopped)
1 cup butternut squash (finely chopped)
1/2 cup carrots (chopped)
sprinkle - crushed red pepper (optional)
sprinkle - Bacon Bits (optional)



  DIRECTIONS
 
Drain and rinse chick peas.

Heat olive oil in 3-qt saucepan over medium-high heat.

Saute onions and garlic for 1 min.

Add chick peas, mix and cook for an additional 2 mins.

Add remaining ingredients except Fresh GourmetŪ Santa Fe Style Tortilla Strips. Bring to a boil, reduce heat to medium-low, coer saucepan and simmer for 30 mins, stirring occassionally.

Top each serving with Fresh GourmetŪ Santa Fe Style Tortilla Strips.
