MEXICAN SOUP  
 
  SERVINGS: 4 to 6

INGREDIENTS
 
1 cup Fresh GourmetŪ Sante Fe Style Tortilla Strips
1/2 lb chicken breast, cooked and diced
1 can Mexican seasoned crushed or diced tomatoes
1/2 can black beans, drained
1 small can corn, drained
1 cup rice, plain or Mexican style
2 cups water (adjust as desired)



  DIRECTIONS
 
Season chicken as desired with salt and pepper. Bake or grill until cooked through.

Meanwhile, mix all other ingredients in a large pot. Bring to a boil, reduce heat and simmer until rice is cooked, about 20 mins.

Add cooked chicken. Adjust thickness with water as desired.

Serve in large bowls and add Fresh GourmetŪ Santa Fe Style Tortilla Strips.

If you`re really pressed for time, buy canned Mexican style soup and just heat and serve. You can also add other toppings, such as cheese or sour cream.
