INGREDIENTS
 

For Pesto:
½ cup Fresh Gourmet® Toasted Sliced Almonds
5 oz. pack baby spinach leaves
½ cup basil leaves
2 garlic cloves
1/4 cup olive oil
salt and pepper to taste

For Quesadilla:
1 cup Fresh Gourmet® Garlic Pepper Crispy Onions
½ cup diced roasted chicken
1 ½ cup mix of Monterey Jack and mild cheddar cheese
4 flour tortillas




  DIRECTIONS
 

For pesto mix all ingredients in food processor and add olive oil slowly. Blend until you get a thick paste.

Spread 2 tablespoons of pesto on each tortilla. Heat tortillas one at a time in pan. Sprinkle in diced chicken.

Add some of the Fresh Gourmet® Garlic Pepper Crispy Onions and top with cheese mixture.

Tip: Save leftover pesto and use in a pasta salad or grill with meat.
