MANGO SALSA SALAD

INGREDIENTS
 
(4) beefsteak tomatoes
1/4 red onion
1/2 cucumber
1 jalapeno
1 lime, juiced
2 tablespoons fresh cilantro, chopped
1 cup Fresh Gourmet Tri Colored Tortilla Strips, crushed and some reserved for garnish
1 cup feta cheese, crumbled



  DIRECTIONS
 
Thinly slice the bottom of the tomatoes so that they stand upright, cut off the tops & scoop out the inside with a spoon. 
 
Once tomatoes have been hollowed, lightly sprinkle salt & pepper inside hollowed area.
 
In a separate bowl, chop or dice onion, cucumber, jalapeno & cilantro. Sprinkle with lemon juice, feta, salt & pepper - mix 
 
Roughly crush the Fresh Gourmet Tri Colored Tortilla Strips and sprinkle into bowl of mixed chopped ingredients & toss
 
Taste and sprinkle with more salt and pepper if needed. 
 
Immediately scoop mixture into each of the hollowed out tomatoes, garnish and serve immediately. Enjoy!
