INGREDIENTS
 
1/2 cup Fresh Gourmet®  Dried Blueberries and Glazed Almonds
4 cups spring salad mix, washed and dried
1 cup fresh strawberry quarters
1/2 cup shaved Asiago cheese
sea salt and black pepper to taste
vegetable oil for cooking
 
Raspberry Vinaigrette:
1/4 cup raspberries
1 tablespoons balsamic vinegar
1 tablespoon red wine vinegar
1 teaspoon brown sugar
1/4 cup olive oil
sea salt and pepper to taste
 



  DIRECTIONS
 

Using a large spoon, push raspberries through a wire sieve to puree and remove seeds.  Combine raspberry puree, both vinegars, and sugar in a blender. With blender running, slowly pour in the olive oil and blend until emulsified. Combine spring mix, strawberries, cheese and Fresh Gourmet®  Dried Blueberries and Glazed Almonds in a large bowl.  Season dressing with salt and pepper and drizzle over salad. Toss to coat and enjoy.
