INGREDIENTS
 


1 large head broccoli, cut into small florets
3 carrots, julienned
1/2 red onion, thinly sliced
1 gala apple, thinly sliced
1/2 cup Fresh Gourmet Honey Glazed Almond Pieces
Dressing:
2 tablespoons red wine vinegar
1/4 cup whole seed Dijon mustard
Juice of one orange
2 garlic cloves, peeled
1 tablespoon honey
3 tablespoons olive oil
1/4 cup mayonnaise




  DIRECTIONS
 


In a medium pan fitted with a steamer basket, steam broccoli florets just until softened, 3 to 5 minutes. Meanwhile, combine vinegar, mustard, orange juice, garlic and honey in a blender. Blend until smooth. With blender running, slowly pour in the olive oil and blend until emulsified. Add mayonnaise and blend just until fully incorporated. Remove broccoli from steamer and plunge into a bowl of ice water. Allow to soak in ice water for 1-2 minutes. Drain broccoli florets and combine with carrots, red onion, and apples in a medium mixing bowl. Drizzle dressing over vegetables and toss to coat. Top with Fresh Gourmet Honey Glazed Almond Pieces and enjoy.
