Boston Red Leaf Salad

2 large heads Boston Red Leaf Lettuce
1 cup Bleu Cheese Crumbles (or Goat Cheese)
1 Red Onion, sliced thin
1 Tomato, sliced into wedges
1—5 oz. bag Fresh Gourmet® Butter & Garlic Croutons
Salt and freshly ground pepper

Citrus Vinaigrette:
1 cup Orange Juice
3 Tbsp. Champagne Vinegar (or Balsamic Vinegar)
˝ cup Olive Oil
1 Tbsp. Dijon Mustard

Wash and dry lettuce. Refrigerate. In a sauce pan reduce the orange juice to a syrup and cool.

Blend orange syrup with mustard and vinegar. Whisk in the oil slowly.

Place lettuce on a large platter or bowl and drizzle with dressing. Garnish with croutons, red onions and tomatoes.
