Potato Beef Stir Fry with Wontons
1 lb beef tenderloin, sliced thinly into ˝” pieces 3 Idaho® Potatoes, peeled, cut into ˝” thick strips 1 cup Fresh Gourmet® Wonton Strips 1/2 cup red onions, sliced 3/4 cup red bell peppers, cut into 1/2” pieces 6 oz yellow squash, sliced 6 oz snow peas 1/2 cup edamame 1/3 cup water 1 tbsp oil 1 1/2 tbsp soy sauce 1 tbsp cornstarch
Heat oil on medium high heat. Cook beef until lightly brown. Add onions, bell peppers and potatoes. Sauté until onions are translucent. Stir in squash, snow peas and edamame. Cook for 4-5 minutes. In a bowl, mix water, soy sauce and cornstarch. Add liquid to beef, stir until thickened. Garnish with Fresh Gourmet® Wonton Strips.
Optional: Serve over rice.
