Southwest Salad with Santa Fe Tortilla Strips

Fresh Beginnings start with Fresh Gourmet

1/2 lb shrimp, peeled and de-veined
1 package Santa Barbara style mixed greens
1/2 cup diced green onions
1 15 oz. can black beans, drained
1 15 oz. can roasted kernel corn, drained
1 avocado, diced
1/2 cup peeled and chopped jicama
1/2 cup cilantro
1 cup shredded Monterrey jack cheese
1/2 cup ranch salad dressing
1 pkg Fresh Gourmet® Santa Fe Tortilla Strips *

In a large bowl, combine all ingredients adding Fresh Gourmet Tortilla Strips just before serving.

Serves 6.

*For a single serving use 1/4 cup Tortilla Strips.
