Southwest Cornbread Salad
2 heads Boston Lettuce 1/2 cup Black Beans, drained 1/2 cup Whole Kernel Corn 7 Grape or Cherry Tomatoes, halved 3 Tbsp. Cilantro, chopped 1/2 Red Onion, chopped
1—5 oz. bag Fresh Gourmet® Cornbread Sweet Butter Croutons
Salt and freshly ground pepper to taste
Honey & Spice Salad Dressing: 2 Tbsp. Lime Juice 2 Tbsp. Lime peel, grated 3 Tbsp. Minced garlic 1/2 cup Honey 1/3 cup Olive Oil 1/4 cup Rice Vinegar Pinch Cayenne Pepper
Dressing: Whisk dressing ingredients together in a small bowl.
Salad: Wash and dry lettuce, and tear into bite-sized pieces. Assemble all ingredients, except croutons, in a large salad bowl. Toss with dressing and top with croutons, and enjoy!
For a special treat, serve with your favorite chili, topped with Fresh Gourmet® Cornbread Sweet Butter Croutons.
