Farmer's Market Salad with Parmesan Cheese Crisps

INGREDIENTS


For the Dressing:

  • ½ cup extra virgin olive oil

  • 3 tablespoons Fresh Gourmet Lemon Juice

  • 1 tablespoon honey

  • 1 teaspoon kosher salt

  • ½ teaspoon black pepper

For the Salad:

  • 4 cups baby arugula

  • 1 cup blackberries

  • 1 cup blueberries

  • ½ cup snap peas, sliced

  • ½ large english cucumber, thinly sliced

  • ¼ cup fresh mint leaves, chopped

  • ¼ cup fresh basil leaves, chopped

  • 1 avocado, sliced

  • ¾ cup Fresh Gourmet Baked Parmesan Cheese Crisps


INSTRUCTIONS


In a small bowl whisk together olive oil, lemon juice, honey, salt and pepper. Set aside and refrigerate until ready to serve.


To a large bowl, gently combine the arugula, blackberries, blueberries, snap peas, cucumber, mint, and basil leaves. Toss the salad with dressing, starting with a few tablespoons at a time.


Top with avocado slices and Fresh Gourmet Baked Parmesan Cheese Crisps. Enjoy!

While making this salad, my avocado was overripe and mushy, so it fell Block Blast apart instead of slicing neatly, making the presentation a bit messy.
