Southwestern Salad with Avocado Dressing and Crispy Hatch Chiles

Ingredients:

Salad:

• Chopped romaine lettuce

• Grilled corn

• Sweet potatoes, roasted

• Black Beans

• Fresh Gourmet Crispy Hatch Chiles

Dressing:

• 1 avocado

• 3 tbsp plain yogurt

• 1/2 lemon juice

• salt and pepper


Preparation:

Salad:

• Begin by grilling some corn kernels. While the corn is grilling, roast a sweet potato and chop it into cubes.

• In a bowl, add some chopped lettuce, sweet potatoes, corn and black beans.

• Top with Fresh Gourmet Crispy Hatch Chiles.

Dressing:

• Blend all the ingredients until smooth.

• Serve on the side of salad or tossed inside.
