
Ingredients:
• 1 onion chopped
• olive oil
• 2 tbsp Garlic paste
• 1 tsp ground cumin
• 14 oz can crushed tomatoes
• 32 oz vegetable stock
• 14 oz can black beans, rinsed and drained
• Salt and pepper
• Fresh Gourmet Crispy Tortilla Strips
• 1 Avocado
• 2 oz queso fresco
• Cilantro leaves
•1 lime
Preparation:
• Heat some olive oil in a medium pot and saute onion and garlic paste until softened stirring occasionally.
• Stir in the cumin and the canned tomatoes and vegetable stock.
• Simmer for 5 minutes, then add black beans.
• Cook for 10 min or until slightly thickened, stirring occasionally.
• Season with salt and pepper to taste.
• Serve the soup and top with avocado, tortilla strips, quest fresco, cilantro, lime and Fresh Gourmet Crispy Tortilla Strips.
