Ranch Crumbles on Salad

Ingredients:

• 2 cups mixed greens

• 1 can (15 oz) black beans, rinsed and drained

• 1 cup cherry tomatoes, halved

• 1 avocado from Mexico, cubed

• 1 can yellow corn, rinsed and drained

• ½ cup sharp cheddar cheese, shredded

• ½ cup Fresh Gourmet® Focaccia Ranch Crumbles


Dressing:

• Juice of 1 lime

• 2 tbsp olive oil

• ½ tsp salt

• 1/8 tsp cayenne pepper

• Whisk lime, olive oil, salt and pepper for 1 minute until ingredients are well mixed.


Preparation:

• In a large salad bowl combine beans, corn, mix greens, tomatoes, avocado and Focaccia Crumbles, mix well and top with shredded cheddar cheese.
