Arugula Salad with Sliced Apples and Sunflower Kernels

INGREDIENTS


For the dressing:

  • ¼ cup extra virgin olive oil

  • ¼ cup lemon juice

  • 2 teaspoons honey

  • 1 teaspoon kosher salt

  • ½ teaspoon ground black pepper


For the salad:

  • 6 cups baby arugula

  • 1 apple, cored and thinly sliced

  • ¼ cup shredded parmesan cheese

  • 3 teaspoons pepitas and sesame seeds

  • Fresh Gourmet® Sunflower Seed Topper for garnish

  • Fresh Gourmet® Dried & Sweet Cranberries for garnish



INSTRUCTIONS


In a large bowl, whisk together the olive oil, lemon juice, honey, kosher salt and black pepper. Add the arugula and apple to the bowl and toss until well coated. Top shaved Parmesan, pepitas, sesame seeds, Fresh Gourmet® Sunflower Seed Topper and Fresh Gourmet® Dried & Sweet Cranberries.
