For the Dressing:
1 teaspoon minced garlic, about 1 clove
1 teaspoon Dijon mustard
1 tablespoon mayonnaise
2 tablespoons white wine vinegar
1 tablespoon Fresh Gourmet Lemon Juice
⅓ cup avocado oil or vegetable oil
1 teaspoon kosher salt to taste
½ teaspoon freshly ground black pepper to taste
For the Salad:
1 head butter lettuce, chopped
3 vine ripe tomatoes, diced
½ red onion, finely chopped
1 avocado, diced
⅓ cup crumbled blue cheese
2 tablespoons minced chives
⅛ cup Fresh Gourmet Pinto Bacon Bits
In a small bowl whisk together garlic, mustard, mayonnaise vinegar and lemon juice. Gradually whisk in oil and season to taste with salt and pepper. Set aside and refrigerate until ready to serve.
To a large bowl, gently combine the lettuce, tomatoes, red onion, avocado, blue cheese and chives. Toss the salad with dressing, starting with a few tablespoons at a time.
Sprinkle with Fresh Gourmet Pinto Bacon Bits and Enjoy!
