Rotisserie Chicken Gyros with Crispy Beets

Yield: 4 servings | Prep time: 30 minutes


For the chicken:

  • 2 cups shredded rotisserie chicken*

  • 3 tbsp avocado or vegetable oil

  • 1 teaspoon minced garlic

  • 1 teaspoon cumin

  • 1 teaspoon paprika

  • ⅛ teaspoon ground cinnamon

  • ½ teaspoon kosher salt

  • ½ teaspoon black pepper

  • 1 tablespoon Fresh Gourmet Lemon Juice

  • 1 tbsp honey

  • ¼ cup chicken stock

For the Pitas:

  • 4 Warmed Greek flatbreads

  • ½ cup store bought hummus

  • 1 cup shredded romaine lettuce

  • ½ english cucumber, diced

  • 2 roma tomatoes, diced

  • ½ red onion, thinly sliced

  • ¼ cup Tatziki to taste

  • ½ cup crumbled feta cheese

  • Fresh parsley and dill for garnish (optional)

  • Fresh Gourmet Crispy Beets


For the Chicken:

Preheat oven to broil and line a rimmed baking sheet with foil.

Place the shredded chicken in a bowl and add the oil, garlic, cumin, paprika, cinnamon, salt, pepper, Fresh Gourmet Lemon Juice and honey. Transfer the mixture to the baking sheet and broil for 8 minutes, stirring in between until the chicken is crispy. Stir in broth and cover with foil for 5 minutes.

For the Pitas:

Place warmed Greek flatbreads on plates. Top with hummus, warm chicken, shredded lettuce, cucumber, tomatoes, red onion, tzatziki, feta and Fresh Gourmet Crispy Beets. Top with fresh herbs and serve.

* Try using eggplant or tofu and vegetable stock for a healthy vegetarian option.
