Crispy Beet Salad

Yield: 4-6 servings | Prep time: 20 minutes


  • 2 cups green leaf lettuce, chopped

  • 2 cups baby arugula

  • 1 large red or yellow tomato, sliced

  • 1 watermelon radish, thinly sliced

  • ¼ cup fresh dill, roughly chopped

  • ½ cup crumbled goat cheese

  • ¼ cup Fresh Gourmet Sliced Almonds

  • ⅛ cup italian or citrus dressing

  • 1 avocado, sliced

  • ¾ cup Fresh Gourmet Crispy Beets


In a large bowl, gently combine the green leaf lettuce, arugula, tomato slices, watermelon radish, dill, goat cheese and Fresh Gourmet Sliced Almonds.

Toss the salad with dressing, starting with a few tablespoons at a time and top with avocado slices and Fresh Gourmet Crispy Beets. Enjoy!
