Grain Bowl with Caesar Crunch

INGREDIENTS

  • 1 cup farro

  • ½ medium red onion, finely diced

  • 2 cups cups finely diced persian cucumber

  • 1 (15 ounce) can chickpeas, rinsed and drained

  • ½ cup crumbled feta cheese

  • ¼ cup freshly chopped

  • ¼ cup freshly chopped parsley

  • ½ cup pea shoots or sprouts

  • 3 Tablespoons lemon juice

  • ¼ cup extra virgin olive oil

  • kosher salt and freshly ground black pepper to taste

INSTRUCTIONS


Add uncooked farro to a medium saucepan with 2 cups of water. Bring to a boil over high then simmer covered for approximately 12 minutes or until tender. Drain, and transfer to a large bowl to cool for one hour uncovered or overnight in an airtight container.


Once cooled, add red onion, cucumber, chickpeas, feta, mint, parsley and sprouts.

Toss with lemon juice and olive oil and season with salt and pepper to taste. Top with Fresh Gourmet® Caesar Salad Crunch and enjoy!
